Arroz Verde

Ingredients
1.5 cups white long grain rice1.25 cups chicken broth1.25 cups non-fat milk1tsp salt1 cup chopped onion3 TBPS unsalted butter1 cup packed fresh spinach1/2 cup packed fresh cilantro leaves1 clove garlic minced
Directions
melt butter, sautee rice in butter until golded - 3-4 min
add onion and garlic and sautee 30 seconds
in a blender combine spinahc, broth and cilantro and puree
add milk and salt to blender and puree again
pour mix over sauteed rice, onion and garlic
stir and bring to a boil
reduce to low heat and cover, simmer 15 min
remove from heat, stir with fork gently
place a folded kitchen towel on top of the pan and replace cover
let sit for five min and serve
