Corn and Green Bean Supper Salad

Ingredients
1/2 cup corn, fresh, canned, or frozen1 cup fresh green beans, snapped into bite-sized peices1/2 large, ripe tomato, diced1 tbsp cider vinegar1 tsp olive oil1 tsp fat-free mayonnaise1 tsp waterdash of salt and pepper1/4 shallot, minced1 green onion, chopped1 tbsp fresh basil, chopped
Directions
Makes a dinner salad for one person.

Bring a pot of water to boil. Boil green beans 5 minutes. Add corn and continue to cook one minute. Drain and rinse under cold water to cool.

Combine remaining ingredients in a bowl. Add corn and beans. Let stand at room temperature 30 minutes to blend flavours.

Grilled, thinly sliced flank steak is a nice addition to this salad.
