Grandma Louisa's Cajun Rice Dressing

Ingredients

2 cups onions2/3 cups bell pepperstart with 1/3 cup oil1 cup celery (2 stems)1 cup white part of green onion (or shallots)4 pods garlic1 tsp salt (ham is salty)3 lbs ground beef1 1/2 lbs ground pork2/3 lb ham
Burn iron pot: cover with oil and smoke it. Turn off fire. Cool and pour out oil into a cup.
Heat 1/3 cup oil and add onions until dark brown.
Add beef and pork and 1/2 of the chopped green pepper, celery, and garlic.
Cover and cook 15 to 20 minutes.
Add diced ham and green onions.
Cook 10 minutes more.
If needed to keep dressing juicy, add a little boiling water.
Cook rice separately and add.
