Healthy Cooking Confetti Couscous Salad

1 cup dry Couscous1 cup Chicken Broth (use veggie broth to make this vegetarian)2 cups cooked black beans (if using canned, drain and rinse well)3/4 cup frozen sweet corn kernels, thawed5 radishes, diced6 green onions, sliced1/4 cup cilantro, chopped2 Tbsp plus 1 tsp Olive Oil2 Tbsp Lime Juice1 1/2 tsp Red Wine Vinegar1/2 tsp Cumin 1/4 tsp Salt1/4 tsp Black Pepper
In a large saucepan, bring broth to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5-10 minutes or until broth is absorbed. Fluff with a fork.
Into the cooked couscous, stir the beans, radishes, onions and cilantro. In a small bowl, whisk the oil, lime juice, vinegar, cumin, salt and pepper. Drizzle over salad and toss to coat.
