Baked Butternut Squash

1 med. butternut squash1-2 sprays (per cube) I Can't Believe It's Not Butter spraySalt and pepper to taste
Rinse squash. Cut into approx. 1-inch cubes, remove seeds and fibers. Place in 13x9 baking dish. Pour in 1/4 inch water (add imitation butter flavoring - optional), cover and bake. 350F for 45 minutes or until tender.
To serve & serving size: Use slotted spoon to remove 1/4 of squash (approx 1 to 1-1/2 cups cooked) from pan, spray with butter substitute (to taste - I use 1-2 sprays per cube), salt and pepper to taste.
