Low Carb Sweet French Waffles

3 large eggs 1/4 cup cream cheese, softened 1/4 cup sour cream 2 Tbsp melted butter 2 Tbsp Splenda 1/4 cup Carbquik Bake Mix 1/2 tsp baking powder 1 tsp vanilla extract
Tools: blender, waffle maker
In blender, mix wet ingredients (eggs, cream cheese, sour cream, butter and vanilla) and blend until creamy. Then add dry ingredients (Splenda, Carbquik, baking powder). Blend until well mixed and creamy. Cook as usual in your waffle maker.
Makes appx. 3 large waffles (4.5g net carbs per waffle).
Variations: Can substitute Carbquik Bake with Atkins Bake Mix or for non-low-carb version, Bisquik.
