Quinoa (or Couscous) Salad with Vegetables

3 cups cooked quinoa or couscous (about 3/4 cups uncooked)2 T. wine vinegar1 small garlic clove, crushed (opt)1/2 t. Dijon mustard (opt)3 T. olive oil12 cherry or grape tomatoes, halved1/2 cup diced red bell pepper (opt)2/3 cup (one 7 3/4 oz. can) chickpeas1/2 cup artichoke hearts, quartered (opt)1/2 cup olives (opt)1/3 cup pine nuts, toasted (opt)1/4 cup parsley (opt)1/4 cup finely sliced scallions (opt)Fresh lemon Juice, to tasteSalt and pepper, to taste
1. Cook the quinoa/couscous according to package directions. Allow to cool in bowl and fluff with fork.
2. Mix vinegar and optional garlic and mustard. Add olive oil and mix.
3. Add your chosen vegetables to the quinoa/couscous, then add the dressing and mix. Add lemon juice, salt and pepper to taste.
