Beef 80% lean or less 6 ozPinto and/or black beans 1/2 cup (total)Golden Corn 1/2 cupRice of choice (this recipe uses white) 3/4 cupMexican cheese 1/4 cupCumin, Thyme, Lemon Pepper, Garlic Powder, Salt, Pepper, Paprika, Lime Juice (spices are optional and can be changed to suit personal liking)

Cook rice by directions - when there is almost no water add in salt, pepper, paprika, cumin, thyme and lime juice to taste (other personal favorite spices may be used)
Cook the beef until half of it is browned - add in garlic powder and cumin to taste (other personal favorite spices may be used)
Prepare beans and corn in their own pans/pots
Add all cooked ingredients together in a bowl. Sprinkle on cheese to your liking. Let cool so as to not burn your tongue...then enjoy.
