Chicken and Lentils

Ingredients

1 Tb olive oil3 lbs white meat chicken (cut into 6 pieces)1 large onion, sliced1 Tb chopped garlic1 Tb chopped or grated ginger1 cup chopped tomato1 tsp ground coriandersalt and pepper1 large bunch cilantro or parsley sprigs, tied together with stringtwo 3-inch cinnamon sticks1 cup dried brown or green lentils, washed and picked over
Heat oil in a skillet on med. heat, and briefly cook onions, garlic, ginger, tomato, coriander and salt and pepper. Pour in 4 cups of water, and add the rest of the ingredients, except for chicken. Cover and simmer for 30 minutes, until lentils are almost done.
Discard the herb bundle and cinnamon sticks and return the chicken to the pan. Cover and let simmer gently until the chicken is cooked through, another 10-20 minutes. If you want to be sure, make sure that thickest part of the chicken reads 155-165 on a thermometer. Taste the seasonings and serve.
You can also substitute chickpeas for the lentils.
