Coconut Creme Pie (CB's Faves)

Ingredients
Pie ShellFilling:.75 Cup Sugar3 TBS Corn Starch.25 tsp Salt2 Cups Milk3 Egg Yolks, slightly beaten1 tsp Vanilla1 Cup CoconutMeringue:3 large egg whites1 TBS Corn Starch.25 tsp Cream of Tarter6 TBS Sugar1/3 Cup Coconut
Directions
Bake pie crust according to directions. Allow to cool.

In a sauce pan, combine sugar, conrstarch, and salt; gradually add milk. Cook and stir over medium heat until bubbly. Cook and stir 2 minutes. Remove from heat. Stir a moderate amount of hot mixture into the egg yolks; immediately return to hot mixture. Cook 2 minutes stiring constantly. Remove from heat and add butter, vanilla and coconut. Pour into a cooled pastry shell. Spread meringue atop, sprinkle with 1/3 Cup coconut.

Meringue:
In a large bowl, beat egg whites, cornstarch adn cream of tarter at high speed with an electric mixer. Mix until soft peaks form. Add sugar one tablespoon at a time, beating well after each addition. Spoon meringue onto pie, swirling to make soft peaks. Brown merangue in oven. Watch carefully.
