Ingredients
2 cups shredded Zucchini (skin and juice included-remove seeds if large)2cups flour2cups sugar3 eggs1/4 tsp baking powder2 tsp baking soda2 tsp vanilla3 tsp cinnamon1 cup chopped walnuts (optional)1 tsp salt
Directions
beat eggs, add sugar and zucchini, mix well, add dry ingredients, mix, add vanilla and nuts. Pour into two loaf pans. Bake at 350 for 1 hour.

    I plugged the recipe into the calculator and it came out to over 2800 calories (as one serving, of course...). If it's divided into 9 servings, it's 312 calories per serving, without the walnuts. - 9/25/07

    INCREDIBLE!!!!! So moist & it smelled so good while it was baking we could hardly wait for it to get out of the oven so we ate it while it was still piping hot.     I am going to try it with half splenda and half sugar. Plus I will add fresh nutmeg. The splenda might cut down the calories. There is no way it is only 78 with 2 c. of sugar in it. - 8/8/09
