Shrimp Fettuccini Alfredo

Ingredients
1 lb of raw small shrimp1 tablespoon olive oil1/2 bunch of fresh asparagus cut in 1" pieces1/2 medium onion cut in 1/2 and slice3 cloves garlic crushed1/2 block lowfat cream cheese 1/2 cup grated parmesean cheese1/2 box of cooked fettuccini pasta1 tsp salt, divided1/4 teaspoon white pepper if desired
Directions
Start cooking pasta in boiling salted water. While that is cooking, put the olive oil in a skillet and heat to medium. Add asparagus and onion and salt and let cook 5 minutes occasionally stirring gently (or until the asparagus is cooked to your taste) . Add the garlic and let cook for another minute. Then add the shrimp and other 1/4 teaspoon salt and cook until all shrimp are mostly pink (do not overcook!!).
Push the shrimp and vegetables to the side and add the cream cheese to the liquid on the bottom of the pan. Stir cheese into liquid until completely melted. Add pepper and parmesean cheese and stir until incorporated.
Gently fold the shrimp and vegetable mixture into the cheese mixture. Turn off the stove.
Drain your pasta (don't rinse) and add that to the skillet. Combine shrimp and pasta and serve!

You can substitute broccoli for asparagus if you don't like asparagus. Just be sure that the broccoli isn't overcooked or else it will fall apart in your sauce.

    Super! 'Could add mushrooms and fresh red pepper. I added a half cup of chicken bouillon to steamed shrimp and it was still terrific! Quicker that way, too, because the grocery store will season and steam the shrimp for you. Definitely a keeper! - 9/2/12

    This was an easy and delish meal to create. I replaced the asparagus with kale. And I bought regular cream cheese by mistake, and used some cream to thin it out a bit. Through in scallops to boot... For a first time at making fettuccini alfredo it was pretty simple.. - 1/9/12
