Vegetarian 'Chicken' Tacos

Filling:* Morningstar Farms Chicken Strips meal starter, full package, diced in 1 inch cubes * 2 Yellow Onions, minced * Garlic, 6 cloves, minced * Chili powder, 1 tbsp * Oregano, ground, 1 tbsp * Cumin seed, 1 tbsp * Serrano Peppers, 1 pepper minced. Control heat with how much seed included * Paprika, 1 tbsp * Vegetable Broth, 2 cup Tacos: * Corn Tortillas, 12 tortilla, medium baked on taco shell form to make low fat shells * Romaine Lettuce , 2 cups, shredded * Red Ripe Tomatoes, 2 medium whole diced*For a little extra flavor use low fat shredded cheddar - not included in the calculations here
Mince garlic and onion then caramelize in 2Tbsp olive oil. Once done, mix in spices and mix thoroughly. Add cubed 'chicken' and vegetable broth and bring to a boil, then reduce heat and simmer until the right consistency for taco filling (a thick sauce), about 20 mins.
While filling simmers, make taco shells by baking corn tortillas over taco shell forms. If not available, just drape over rungs in over rack, or make soft tacos using low fat flour or corn tortillas warmed in the microwave.
Place filling, tomato and lettuce into shell. Serve with fat free refried beans, and a sprinkle of low fat shredded cheddar or cheese substitute if desired.
