Chicken and Turkey Sausage Jambalaya

* - Healthy Choice Low Fat Sausage is made with mostly turkey, but it does have some pork in it. You can substitute pure turkey sausage if you prefer.
Cut chicken up into bite size pieces.
Season with cayenne pepper and black pepper.
Brown chicken in pot with melted butter. Remove chicken.
Chop [white] onions and bell pepper. Cut garlic finely. Brown onions, bell pepper, and garlic. Add tomato sauce and stewed tomatoes. Simmer 15 minutes.
Add chicken and sausage cut into bite size pieces. Cook until chicken is tender. Add raw rice and chopped green onions. Stir ingredients thoroughly. Add enough water to cover ingredients by about 1 inch. Bring to a boil. Cover and cook on low heat for 35-45 minutes or until rice is tender.
NOTE: Unlike a lot of rice dishes, not all of the water will cook away. This is OK.

MOONDARRA
I used a turkey Jennie-O kielbasa (because that's what I had) and 3 pieces of boneless chicken thigh, left out the green onions (didn't have any), used fire roasted tomatoes with chilies, and chicken broth instead of water. Liked it a lot! Froze the leftovers and would make again. - 2/25/09
