Lemon Honey Salad Dressing

Ingredients
1/4 cup fresh lemon juice (about 1 lemon)1 tsp lemon zest 1 tsp honey1 tsp salt1 tsp black pepper1/2 cup extra virgin olive oil
Directions
Put all ingredients in blender except for olive oil. Puree, then slowly add in the oil.

Makes 6 generous servings, or 8-10 'small side salad' servings. I use mixed baby greens and add in chopped cucumber, chopped tomato, and sunflower seeds. if I have some fresh italian herbs to use up I'll chop some up with the greens as well. I toss the salad up with the dressing so I don't have a measurement of how much each serving actually is.
