Creamy Green Chile Chicken Enchiladas

olive oil, 1/4 cup chopped onion, 1/2 can chopped green chiles, 4 oz cream cheese, 6 ounces cooked chopped chicken, 4 flour tortillas, 1 can green chile enchilada sauce, 1/2 cup colby jack cheese
1. Heat oil in large skillet over medium heat: add onion and sauté until softened, about 5 minutes. Stir in green chiles, chicken & cream cheese. Stir constantly until cream cheese melts. Remove from heat.
2. Spoon approx 3-4 Tbsp chicken mixture down center of tortillas. Roll up tortillas and place seam side down in lightly greased 9x9 baking dish. Repeat.
3. Pour enchilada sauce over enchiladas & top with as much cheese as desired. Bake in 350 oven for 35-45 minutes, until bubbly & cheese is lightly browned.
Makes 2 servings (2 enchiladas per person)
