Sweet Potato, Apple and Bacon Soup

1 large sweet potato, cubed1 medium onion, finely chopped1 medium granny smith apple, cored and cubedVegetable stock 3 cupsspices50g streaky bacon finely chopped100ml soy cream1 Tbs brewers yeastSalt & pepperParsley or sage to garnish
Serves 3
Prepare all the ingredients and place potato, onion and apple in saucepan.Cover with vegetable stock and add spices (cinnamon, cloves, ginger). Bring to the boil and simmer for 30 minutes, or until sweet potato is soft.
Add brewer's yeast and liquidise.Add bacon and return to heat. Bring to the boil and allow to simmer for a few minutes, until bacon is cooked.
Remove from heat, add soy cream and agave syrup. Season to taste with salt and pepper and garnish with parsley.
