Tofu & Mango Dessert

Ingredients
1 340g block silken tofu — soft, well drained1 mango (fresh or frozen)3 T Agave nectar/ honey/ syrup to taste½ tsp ground ginger½ tsp ground cinnamonpinch salt
Directions
Blend tofu, mango, agave nectar and ginger until smooth.  Transfer to serving bowls and freeze for an hour. Sprinkle with cinnamon or decorate with a few cubes of reserved fruit.

You can replace the mango with your favourite soft fruit (ie papaya/ peaches/ berries)

    I guess mangoes aren't that great in my area, because I put 2 whole mangoes in, and it still didn't taste like mango. In the end, I put in some strawberries and 2 T buckwheat honey. :-) - 3/16/11
