1 tbsp Extra Light Olive Oil2 Portabella Mushroom caps1 large Green Pepper1 large Onion1 tsp Cumin 1 tsp Chili powder1/2 c Amy’s Kitchen Traditional Refried Beans1/3 c Yogurt, plain whole milk1/3 cup Salsa
Directions
Slice veggies
Saute with oil
Add seasonings
Add veggies and condiments to tortilla
Enjoy!

    I made a marinade of the oil and spices for the veggies. Then baked them at 350 for about 30 mins. You can also add squash or zucchini. - 6/12/08
