Pumpkin Soup (coconut milk thickener)

Ingredients
4 c pumpkin2 C chicken stock (2 Tbsp powder mixed in water)1/2 c coconut milk2 c celery1 c onionsalt & peppertumericseasoningmixed herbs
Directions
Boil pumpkin with stock and vegetables. When pumpkin is soft, mash it and add coconut milk to thicken.

Makes 4 large bowls full.
