Chicken Cordon Bleu

Ingredients
6-8 boneless, skinless chicken breasts6-8 slices of ham (Deli works just fine)6-8 slices of swiss cheeseflourbutteronion1 can cream of mushroom soup1/2 C milk
Directions
1. Tenderize the breasts so that they are pretty thin and put a slice of ham and swiss cheese in the middle.
2. Roll up the breasts so that they completely encompass the ham and cheese. Secure them shut with toothpicks.
3. Coat each breast with flour and brown them in a frying pan w/ butter.
4. Once browned, place breasts in 8x10 dish and bake uncovered at 325 degrees for 25 minutes.

THE SAUCE:
1. Saute onions in 6 Tbsp butter and flour. Add salt and pepper to taste.
2. Add 1 can of cream of mushroom soup and 1/2 C skim. Add more to make consistency thinner. Drizzle on top of chicken breasts before serving.

Sides:
Rice goes very well with this dish, especially when extra sauce is mixed in. Green beans are another favorite side dish of mine for this meal. Enjoy!
