Cashew Chicken Salad

Ingredients
1/2 cup fat free mayonnaise6 tablespoons honey mustard1 tablespoon red wine vinegar1/2 teaspoon saltDash pepper3 cups cubed cooked chicken2 celery ribs, thinly sliced1/2 cup chopped cashews1/4 cup chopped red onion4 wheat tortillas, warmed1/2 cup fat free shredded cheddar cheese
Directions
In a bowl, combine the mayonnaise, mustard, vinegar, salt and pepper. Stir in the chicken, celery, cashews and onion. Spoon about 1 cup down the center of each tortilla; sprinkle with 2 tablespoons cheese. Roll up. Makes 10- ½ cup servings.
