Ingredients

    2 tablespoons water
    1 1/2 tablespoons red wine vinegar
    1 tablespoon olive oil
    1 tablespoon honey
    2 teaspoons Dijon mustard
    1/4 teaspoon black pepper
    2 pears, cored and sliced
    8 cups Fresh Express Baby Spinach
    1/2 cup blue cheese, crumbled
    1/4 cup red onion, thinly sliced

Directions

1. In a small bowl, whisk together the water, vinegar, olive oil, honey, Dijon mustard, and black pepper.

2. In large bowl, add the pear slices and 2 tablespoons of the vinaigrette and toss to coat.

3. Add remaining dressing, spinach and onion and toss to coat.

Serves 4.

    I make this salad a lot and it's always a hit! If you can spare the extra calories, add crumbled goat cheese on the top too -- the creaminess of the cheese goes great with the pears. :-) - 1/27/09

    Delicious. This salad is exciting compared to the same old, and the dressing is easy to make. I sometimes add in a couple of tablespoons of sliced almonds, dried cranberry and have also make it with canned mandarine oranges if I don't have pears on hand. - 7/5/09

    Very flavourful salad! The pears add a nice texture. Made this for dinner last night using one Red D'Anjou pear. Also added an ounce of plain goat cheese and one 2.6oz pouch of Starkist Tuna for protein. Thanks for sharing! - 2/23/10

    This salad is filling, tart and sweet all at the same time. It's also delicious and easy to make. I'm going to try it using orange sections in place of the pears for variation. - 2/1/09
