Tortellini-vegetable salad

Ingredients
2.67 cups cheese tortellini6 cups mixed salad greens1.5 cups sliced fresh mushrooms1 medium red pepper, cut into strips1/4 cup fresh basil1/4 cup white wine vinegar2 tbsp water2 tbsp EVOO2 tsp sugar2 cloves garlic, minced1/4 tsp black pepper1/2 cup seasoned croutons
Directions
Cook tortellini according to package directions, omitting any oil or salt. Drain tortellini, rinse with cold water, and drain again.

Combine tortellini, salad greens, mushrooms, sweet pepper, and basil.

For dressing, in a screw-top jar combine vinegar, water, oil, sugar, garlic, and black pepper. Cover and shake well. Pour over tortellini mixture and toss to coat.

Add croutons to taste. Makes 4 servings.
