Southwest Chicken and Rice

1 lb of boneless skinless chicken breasts1 c. salsa1 pkg. taco seasoning2 c. water2 c. minute rice uncooked1 c. canned black beans drained1 c. shredded cheddar cheese (optional)
Cut chicken into 1 inch by 1 inch pieces and fry them in a small amount of oil in a large skillet. (or for light option cut after chicken has been grilled or boiled). Once cooked, add salsa, taco mix, and water and bring to a boil. Cover and simmer on low for 10 mins. Return to boil. Stir in rice and beans. Sprinkle with cheese and cover for 5 mins. Serve with a dollop of sour cream and/or tortilla chips for a crunch!
