Ingredients
Ingredients:*Peppers, sweet, red, fresh, 1/2 medium Onions, raw, 1/3 medium (2-1/2" dia) ***Ground cumin 1/4 tspChili powder, 1/2 tspGarlic powder, 1/2 tspBeans, pinto, 1 cup Salsa,1/3 cupCorn Tortillas, 1 tortilla, medium (approx 6" dia) *Summer Squash, 3/4 cup, sliced - ZUCCHINI SQUASHOlive Oil, 1 1tsp
Directions
Rinse and cut peppers, onion and zucchini into thin vertical slices. Heat olive oil in a skillet to medium heat and add the vegetables. Stir-fry about 3-4 minutes., or until vegetables are tender but still crunchy. Add the cumin, chili powder, garlic powder and beans. Cook for about 3-4 more minutes. Stir in salsa, mix thoroughly and cook for another minute. spoon mixture down center of tortilla, roll up and heat about 15-20 seconds in microwave oven and serve. Microwave's vary, adjust time accordingly.
