1 MEDIUM OR 2 SMALL EGGPLANT 1 JAR RAGU CHUNKY VEGETABLE SPAGHETTI SAUCE 1 PACK OF LOW FAT MOZARELLA SHREDDED CHEESE DIRECTIONS: SET OVEN TO 375 PEEL AND SLICE LENTHWISE THE EGGPLANT. PLACE THE EGGPLANT SLICES ON A ROASTING RACK PAN SPRINKLE A LITTLE OLIVE OIL ON THE EGGPLANT, AND ROAST IN THE OVEN UNTIL DONE. WHEN DONE PLACE SOME SLICES IN A CASSEROLE DISH, LAYER WITH SAUCE, THEN CHEESE, AND CONTINUE THE LAYERS UNTIL YOU FINISH UP WITH THE CHEESE AS THE TOP LAYER.
