Chicken Rolls with Salsa

9 pounds boneless shinkess chicken half breasts4 chopped scallions2.4 ounces black olives3 (8 oz) cream cheese - you may use light - softened3 cups salsa1 diced large red bell pepperdash paprika
Makes 3 entrees, 4 servings each.- 3 8 inch baking dishes needed
Combine pepper, scallions and black olives in a small bowl - set aside
Blend cream cheese and salsa - with mixer or by hand
Rinse and trim chicken - flatten
Place 2 TBSP pepper mixture on the wide end of the chicken and roll.
Divide the chicken between the 3 baking dishes and add the cheese mixture evenly between the pans.
Add paprika
Wrap each dish entirely in plastic wrap, top with label, and freeze
To bake, completely thaw one entree - preheat oven to 350, cover the dish with foil and bake for 1 hour
