4 Med. tomatos1 lg. Cucumber (with peel)4 lg. slices Red Onions (to taste)1/8 cup Olive Oil3/4 cup Distilled White Vinegar1/2 Tbs. Jamaica Me Crazy no-salt season1/4 cup Athenos Reduced Fat Feta Cheese2 oz Kalamata, Green Olives, pitted1/4 cup fresh chopped Basil1 tbs minced Garlic
Slice all vegetables to preferred bite-size. Toss with oil, vinegar and preferred seasoning. Place in refrigerator to marinate, 1+ hours.
