Introduction

Ingredients

    2 tablespoons Dijon mustard
    2 cloves garlic, minced
    1 lemon, zested and juiced, about 1/4 cup
    1/4 cup red wine vinegar
    1/2 teaspoon black pepper, coarsely ground
    1/4 cup extra virgin olive oil

Tips

To mellow the garlic flavor, roast it before adding to the dressing.

How can you tell if the dressing is good? I always say that if you get a one-eye wink out of me due to the tang, it's perfect.


Directions

Place all ingredients except the oil in a small food processor or bowl. With the processor running or while whisking, slowly stream in the oil.
Refrigerate up to a week.




Serving Size: Makes 3/4 cup, 1 tablespoon per serving

    This was one of the best dressings I've ever made. With a few minor deviations- I put everything in salad dressing tube, shook it by hand instead of using food processor and added a little extra garlic. - 11/8/12
