Low-Carb "Pancake"

Ingredients: Ricotta Cheese - Lowfat, 0.25 cup Egg, fresh, 2 large Baking Powder, 0.5 tspCinnamon, ground, 1 tsp Nutmeg, ground, 0.5 tsp*Splenda, 1 tsp
Heat small skillet over med-heat (or you can use a waffle iron).
Crack eggs into med. bowl and beat with mixer about 1 minute, until fluffy.
Add ricotta, baking powder, cinnamon, nutmeg, and Splenda (to taste). Beat until smooth.
Pour into skillet and cook until browned and top is set, then flip. (Note- a bigger skillet will give you a thinner pancake.. more like an omelet. The smaller skillet will give you a fluffy pancake)
