Ingredients
1 lb smoked pork or beef sausage (sliced)1 lb boneless, skinned chicked breast (thighs if you like dark meat, dark=more flavor2 cups of white rice 4 cups of water1 teaspoon of vegetable oil1 medim yellow onion, chopped3 teaspoons of chopped garlic2 chicken boullon cubessalt and pepper to tasteteaspoon of season all or louisiana seasoning1 tsp of worchestershire sauceitsp of kitchen bouquet for color
Directions
in a large pot heat oil and brown sausage shile stirring for 5-7minutes. sausage should look cooked and the bottom of pot should be dark. O.k. if sausage sticks to bottom. repeat this step but with chicken. chicken will cook a lot faster so monitor carefully. place sausage and chicken to side.

sautee onions and garlic until transparent and covered with bottom remains. Add chicken, sausage, water, worchestershire, kitchen bouquet, and desired spices, and bring to a boil.

add rice boullion and bring to a boil while stirring occasionally.

reduce heat to simmer and cover for 1 hour
