Eggplant Caviar

Ingredients
Combine in a skillet:1 eggplant, chopped and peeled1 medium onion, diced1/3 green pepper, chopped4 oz. can mushrooms2 cloves garlic, minced3 Tbsp. salad oil Cover pan, simmer 10 minutesAdd:1 tsp. salt1 tsp. oregano1/2 tsp. sugar1 can tomato paste1 C water2 T red wine vinegar1/2 C chopped stuffed green olives 1/4 C capersMix and cook 20 minutes. Serve with cracker or chips, in a pita or with pasta.
Directions
Mix first 6 ingredients (eggplant-oil) in a pan, cover and simmer for 10 minutes. Add remaining ingredients (salt-capers), mix and cook for 20 minutes. Serve with crackers, in a pita or over pasta. Makes 8 1/2-Cup servings.
