Rachel's Ratatouille

Ingredients
2 TBSP olive oil1 chopped large onion1 medium eggplant, chopped1 large zucchini chopped1- 8 ounce pkg mushrooms slicedmini peppers chopped red, yellow, and orange about 2 cups1 large can Muirs organic tomatoes1 small can tomato pastegarlic, basil2-3 cups water
Directions
saute veggies and garlic in olive oil add tomatoes and tomato paste and sufficient water to get desire thickness of stew. Cook until vegetables are done. Serve hot or cold
