Number of Servings: 4

Ingredients

    1 T olive oil
    2 T chicken broth
    1 large onion, sliced
    2 large zucchini, sliced (approx. 2 cups)
    4 large yellow squash, sliced (approx. 2 cups)
    1 cup sliced mushrooms
    1 t. herbes de provence
    1 T lemon juice (or to taste)
    salt and pepper to taste

Directions

Heat olive oil and chicken broth in large skillet over medium heat. Add onion, stirring to cook 2 minutes. Add sliced zucchini, yellow squash, and mushrooms, cooking until the doneness you prefer - approximately 10 minutes for cooked, but not mushy vegetables. Add seasonings, and cook 1 more minute. Serve immediately.
