Preheat oven to 350 degrees. Mix together almond butter, light brown sugar, egg, baking soda, and sea salt until blended.

Add nestle semi-sweet chocolate chips.

Drop dough by tablespoon on to cookie sheet.

Bake 10-12 min until light brown. Let cool 5 minutes before removing to wire rack to cool completely.

I got the idea for this recipe from Elana Amsterdam's book, The Gluten-Free Almond Flour Cookbook. I replaced the agave with xylitol to reduce the carb and sugar load, and reduced overall sweetness a bit. My 12yo son still says this is the best chocolate chip recipe I make, and it contains a lot more protein and fiber than "regular" chocolate chip cookies.
