Ingredients
-
1.5 cups almond flour
1 tsp baking soda
1 large egg
1/4 cup DaVinci Gourmet Vanilla Syrup Sugar Free
1/4 cup Erythritol
1/8 tsp Pure Stevia Extract
2 tbsp (1/4 stick) unsalted butter
3/4 cup chocolate chips
Tips
Note about chocolate chips: I make mine with about 1/3 cup full-sugar chocolate chips and 1/3 cup sugar-free chocolate chips. The recipe nutrition value was calculated with full-sugar dark chocolate chips. You can also add walnuts or pecans, but that will change the nutritional value.
Directions
Preheat oven to 350. Mix together dry ingredients, then add wet ingredients and mix again. If dough seems too wet, let it sit for 5 minutes. Form into balls and press onto a baking sheet lined with parchment paper. Don't worry if it seems too sticky. The wet texture should be that of an oatmeal cookie. Bake for 16-20 minutes, or until cookies begin to turn golden brown. Let cool about 10 minutes on the baking sheet then remove with a spatula and cool on a rack.
