1 lb & 5 oz. LFLower sodium fully cooked ham, ground( I used silver star honey ham )10 oz. pork tenderloin, ground5 oz. perdue 99% FF turkey breast, ground2 egg whites1/4 cup better-n-eggs, egg substitute3/4 cup carnation evaporated skim milk8 nabisco LF cinnamon grahm crackers, crushed1/2 cup packed brown sugar1/3 cup vinegar1 tsp. superfine ground mustard1/8 tsp. ground cloves ( or to personal taste )1 (10 3/4 ) can campbells healthy request tomato soup, undiluted
1) In a bowl, combine egg whites, egg substitute, milk and grahm cracker crumbs, mix well.
Add ham, pork, and turkey; mix well and shape 1/2 cupfuls into individual loaves. ( use a ice cream scoop, much faster! )
Place in a greased (spray pam) 13 by 9 by 2 " baking dish.
2) Combine tomato soup, brown sugar, vinegar, ground mustard and ground cloves. Mix well. Pour over loaves.
Bake, uncovered at 350* for 1 hour, basting after 30 minutes.
Yield: 12 loaves
* You may want to adjust the amount of cloves depending on personal taste.
* If you don't have LF Cinnamon grahms, use LF Honey grahms and add 1/2 tsp. ground cinnamon to the ham loaf mixture.
This recipe makes a tasty sauce, I used some of the sauce over fresh steamed broccoli, it was very good! I think it would be good served over steamed cabbage or mashed potatoes also!
