Easy Spinach Frittata

I package baby spinach3 eggs1/4 C grated Parmesan cheesePam olive oil cooking spray
Spray a little Pam on a non-stick skillet. Sautee the spinach until just wilted. Drain in a colander in the sink to get some of the juices out, and allow to cool a little.
In a large bowl combine the eggs and Parmesan cheese, stir in the cooled spinach.
Spray some more Pam on the non-stick skillet and heat over medium. Pour the egg-spinach-cheese mixture into the skillet and cook for about 5 minutes, checking with a spatula to see if the bottom is turning golden brown. When it does - loosen the frittata and slide it golden-side-down onto a plate - then flip the plate over so the uncooked side goes onto the skillet. Cook for another couple of minutes until the other side is golden.
Serves two for a dinner-size portion. For a smaller lunch portion you can cut it into four pieces. Best with some crusty Italian bread on the side.
