Brown Rice Coconut Pudding

Ingredients
1 C Brown Rice, Dry2 C Water1/2 tsp salt1 Can Coconut Milk1/2 C Splenda1 T CinnamonDash Salt
Directions
Prepare Brown Rice /w H2O & salt as directed on pkg.
Place in oiled casserole with Coconut Milk, Splenda, Cinnamon & salt. Cover and bake in oven at 300F until bubbly about 60 min. Spoon in serving dishes. Serve warm or cold.
Makes 8 - 1/2c servings.
