Ardith's Eggplant Lasagna

1 large eggplant2 Tbs olive oil1/2 jar spaghetti or marinara saucedash of saltdash of pepper1 tsp Italian Seasoning1/2 bad shredded monzzarella cheese (part skim)
Slice eggplant in halve lengthwise. With halves down, thinly slice lengthwise using serrated knife. Sprinkle egplant slices with salt, pepper, and oil. Roast in oven until edges brown (approx 1/2 hour on 400 degrees)
Layer eggplant in 2 quart baking dish. Top with spaghetti sauce, cheese and repeat layers until cheese is last layer. bake in oven of 350 degrees for 20 minutes or until bubbly.
