Low carb ricotta crepes

Ingredients
0.25 cup part skim or nonfat ricotta2 large eggs, or 0.5 cup of egg whites2 tablespoons of sugar substitute (I used 3 packets of Truvia)1 tablespoon of ground cinnamon
Directions
1. Whisk all ingredients very well.
2. Heat non-stick pan over medium low heat. Spray with non-stick spray.
3. Use 3 tablespoons of batter and swirl around until coating the pan completely.
4. Cook for 1-2 minutes and then flip. Cook for another minute.
5. Serve with cream cheese, or fresh fruit, or even sugar-free syrup.
