African Peanut Soup

Ingredients
1 tin canned tomatoes1 tin tomato puree8 cups chicken or vegetable stock1 clove of crushed garlic1 red bell pepper, chopped1 yellow pepper, chopped2 medium onions, chopped1 cup of rice2/3 cup of peanut butter, chunky
Directions
Chop all vegetables
Add all ingredients into a large pot, EXCEPT the rice and peanut butter
Simmer for 10 mins, add rice
bring to the boil and cook until the rice is done
Stir in the peanut butter and mix until smooth
Serve hot and enjoy!
