Spicy Indian Sweet Potatoes

8 to 9 medium size sweet potatopeeled & cubed 3 Tbsp. olive oil1 1/2 Tbsp. curry1 1/2 Tbsp. tumeric1 1/2 Tbsp. garlic powder1 1/2 Tbsp. cumin1 1/2 tsp. cayenne pepper1 1/2 tsp. salt - less or more to taste3 Tbsp. dried parsley
1.) Pre-heat oven to 425 - Fahrenheit.
2.) Cut sweet potatoes into small cubes.
3.) Add potatoes to a large mixing bowl and cover with the olive oil.
4.) After potatoes are completely coated with the olive oil, add all the spices and parsley.
5.) Make sure the potatoes are completely coated with the spices.
6.) Empty potatoes into a 9 X 12 baking dish and bake for 45 min.
Makes 16 - 1/2 cup servings
