Oatmeal Pancakes

Ingredients
3/4 cup of quick oats1 cup skim milk (non fat)1/4 cup whole wheat flour1/4 cup all purpose flour1 1/2 tsp. brown sugar1 1/2 tsp. baking powder1/2 tsp. salt1/4 tsp. ground cinnamon3/4 tsp. vanilla extract1 beaten egg1 tbsp. butter, melted
Directions
Mix the oats and milk together and let soak for 5 minutes. Add all remaining ingredients into the milk/oat mixture.

Cook in canola oil or use cooking spray in non-stick pan.

Makes 2 servings of 2 big pancakes each! Serve with fresh fruit and pure maple syrup. This provides a hearty breakfast. Perfect for that lazy weekend morning!
