Fresh Spinach and Marsala Mushroom Salad

8 C Baby Spinach, fresh4 T Oscar Mayer Bacon Pieces8 Egg Whites, hard boiled1/2 Red Onion, sliced5 Lg Fresh Mushrooms, sliced2 T Smart Balance Light Buttery Spread2 T Marsala Wine6 T Blue Cheese or Roquefort Cheese Salad Dressing
In medium pan, melt Smart Balance Buttery Spread. Add red onions and mushrooms to pan and saute until mushrooms release their water. Add Marsala Wine to pan and turn heat to Med/High to reduce.
In large mixing bowl add cleaned fresh spinach, egg whites, and blue cheese dressing. Toss until coated with dressing.
Layer spinach onto 4 plates, top with 1 T bacon pieces on EACH plate, and then layer with sauteed mushrooms and onions.
