Tea Sandwiches with Lemon, Honey and Ginger

Ingredients
10 slices bread2 preserved lemon halves (or lemon preserves)2 tsp honey1 tsp crushed red pepper1 tbsp minced ginger10 thin slices hard Italian cheese
Directions
Toast bread. Arrange on a platter. Chop lemons and remove seeds. Place in a processor with honey, red pepper and ginger. Make smooth paste. Spread on toast and top with cheese cut into triangles. Serve as is or heat oven to 350 F and cook a few minutes to melt cheese.
