Marmalade/Jam Protein Muffins

Ingredients
2/3 cup whole wheat flour1/3 cup protein powder1 Tbsp honey1/4 teaspoon salt 1 teaspoon baking powder 1 egg 1 Tbsp butter, melted 1 Tbsp applesauce1/4 cup all natural orange marmalade (or any flavor jam)1/3 cup whole milk1 scoop chia seeds (optional)zest of 1 lemon (optional)
Directions
Heat oven to 400°F. Spray muffin tins with no-stick cooking spray.
Combine flour, protein powder, honey, salt and baking powder in medium bowl. In a separate bowl, beat egg. Add applesauce and butter, 1/4 cup marmalade and milk and chia seed. Add all at once to the dry ingredients. Stir quickly and lightly until just mixed (mixture will be lumpy). Fill prepared muffin tins 2/3 full.
Bake for 12-15 minutes. Cool completely.
