Carob Pie

Ingredients
2 1/2 c. soy milk1 c. carob chips1/4 c. corn starch1 tsp. vanilla flavoring1/2 c. orange blossom or clover honey1 Low Fat Pie Crust
Directions
Pour 2 cups soy milk in heavy sauce pan, turn on med. high heat and add carob chips. Melt most of chips stirring constantly to prevent chips from sticking. In small bowl put corn starch and slowly add 1/2 c. soy milk while stirring until corn starch is dissolved. Add to soy chips mixture. Also add vanilla flavoring and honey. Stir until mixture thickens. Pour into crust and set on counter until cooled then put in refrigerator. Filling will thicken more as it cools. Makes 6 servings
