Breakfast pizza

Ingredients
8 oz mushrooms, sliced1 medium green bell pepper, chopped1 large onion, choppedEgg substitute to equal 3 eggs1/4 C fat-free milk1/2 C tomato sauce1 tsp Italian seasoning1/4 tsp. crushed red pepper flakes2 whole-wheat English muffins2 Tbs shredded Parmesan cheese
Directions
1. Heat a large nonstick skillet over medium-high heat for 1 minute. Cook the mushrooms for 4 minutes or until soft, stirring occasionally

2. Stir in the bell pepper and onion. Cook for 4-5 minutes or until the onion is soft, stirring occasionally.

3. In a small bowl whisk together the egg substitute and the milk

reduce the heat to medium. Stir the egg mix into the mushroom mixture. Cook until eggs are set, stirring occasionally.Remove from heat.

5. In small bowl, stir together the tomato sauce, Italian seasoning, and red pepper flakes.

6. T assemble, place a muffin half on a plate, spoon 2 Tbs tomato mixture over each muffin half. Top with egg mixture and sprinkle with cheese.
